Tonight I made Magic in the Middle chocolate peanuts butter cookies, using a King Arthur Flour Company recipe.

Except I inadvertently made a double batch, because I'm so used to cookie recipes taking two sticks of butter that I had creamed the butter and was adding the sugar before I realized that was too much butter.

The recipe is a little fiddly with having to make the peanut filling and then carefully measuring to ensure enough dough to wrap around the filling. I did find out that the round measuring spoons from IKEA are pretty good substitutes for teaspoon and tablespoon cookies scoops, if you don't mind a little mess.

I'm not sure that rolling the cookies in sugar contributed anything, but flattening them is actually important to have them be flat cookies. This is the kind of recipe that would be fun to do as a group -- there's a lot of handwork involved, and a double or triple batch could easily be split between friends.

Today, I made sujuk rolls with the ground lamb I bought on Saturday and a sheet of puff pastry dough that was probably a little more freezer-burned than was ideal.

Sujuk sausage rolls are basically pigs-in-blankets, but fancy.

I used a milk wash instead of an egg wash (not wasting most of an egg when they're not easily available at the moment), and skipped the hemp seeds. I had a good chunk of the ground lamb leftover, so that's back in the freezer until I decide what to do with it -- I might try making some sort of stuffed quick-bread or noodle dish with it.

I pre-ordered from one booth today, so all I had to do was pick up my box:

I did stop at another booth and get a bag of six small persian cucumbers, and three bunches of ramps.

I'm going to try Julia Child's braised cucumber recipe, once I find a bunch of scallions, or other onion substitute. Would 4 tbsp leek sprouts work? I have plenty of those from last week...

I added a bit of bacon fat that I saved from making spaghetti carbonara a week ago, as the bacon I had was fairly lean, but any mild vegetable oil would do if you don't have that.

Also I used my hickory-smoked salt from Auntie Arwen's to give it bit more of a smoky taste, but it's not required.

Serve with crusty bread, if desired.

I stopped by the Safeway coming home tonight and picked up a pack of toilet paper, another box of kleenex, two cans of soup, bagels, cream cheese, skyr, and a couple of packs of ramen.

I don't think I've had cheap ramen since I was in collage, but I'm reasonably sure that I can dress it up into something acceptable by cracking an egg or two into it, and maybe adding a scoop of kimchi or half an onion. Basically, I bought some 'I have no energy to stand for five minutes and cook' food or 'I've been stuck in my apartment for three weeks due to quarantine and have almost nothing left' food; the canned soup can be donated if I don't use it, and the ramen will wind up in some experiment or other.

I also picked up 4 bag of mixed dried berries on clearance, and a bag of peppermints -- at the very least I'll have something to nibble on if I do get stuck in my apartment, and it's not like they'll go bad.

Now the only things left on my list are Dayquil, chocolate, and Brita water filters.

2 lbs of carrots, 5 lbs of apples, dried apple, apple schnitz, pork tenderloin, hausenpfeffer handpies, water buffalo shepherd's pie, three small winter squash (for bean and vegetable posole), toast fig balsamic mustard, champagne honey mustard, rosemary-lemon-zest-lemon simple syrup, cranberry-quince-lemon-cardamom simple syrup, garlic cheese curds, dill & onion cheese curds, two small soft cheeses rolled in herbs, pear-ginger turnover, chicken empanada, tamale de elote, and a loaf of spelt bread.

I made sopa campesina last week, so I'm trying out more bean recipes. It's a thing.

Made apple-rutabaga soup again finally. It's a nice cold-weather soup, chock full of root vegetables, and can easily be made vegetarian by using vegetable stock instead of chicken stock.

Homemade marshmallows using maple syrup as the sweetner

For [personal profile] ellen_fremedon's wedding. Recipe is How to Make Homemade Marshmallows (sweetened with maple syrup) except that I didn't have arrowroot starch, so I dredged them in plain powdered sugar.

If you want to make your own, use a 9x9 pan and make sure you have a good candy thermometer.

I bought a cookbook for insta-pots last weekend, and today I made the 'Pork Vindaloo' recipe out of it.

Needs more salt, more chile peppers, and probably garlic. Could do with some more vegetables besides an onion, but it wasn't bad and it was pretty easy.

I made mushroom bacon today, adapting this recipe to the ingredients I have -- using hickory vinegar instead of liquid smoke to give it a hickory flavor, no tamari or miso paste.

It turned out pretty well, and added a nice bit of protein and savoryness to the vegetable stir-fry I made.

It went well. I didn't make the mushrooms, but frankly, I had so much food that it wasn't needed.

The Liege Sugar Waffle recipe from Everybody Eats Well in Belgium is very sticky -- not quite as annoying as pate choux for cheese puffs, but still -- so I hope it turns out well. The batter is sitting in my fridge right now, as I will be making the waffles tomorrow.

My sujuk rolls are going to be more of sujuk borek, as there were no sheets of puff pastry dough left, and they will have to be wrapped in phyllo dough because that's what I could get. I'm not going to try to make rough puff tonight -- I don't have enough energy for that.

I just made enchiladas using the peach salsa I made, and half a batch of pollo deshebrado. I'm set for the week!

I picked half a pound of buena mulata chiles today, which will go into my batch of salsa morada.

I also picked a few fish peppers, to make peach salsa with, and cut back the tomatillo, which are of course enormous and shading out the other plants. If they'd just droop in the other direction, everything would be fine, but tomatillos never cooperate.

My anaheim greens seem to have enough on them to make chile verde at least once. I'm not too sure about the pasilla, but I can get that dry if I really want to tackle mole negro this year. The shishito peppers are going great, so I foresee a lot of dishes of dried anchovies and eomuk in my future.

I'm supposed to go to Synetic Theater's Wizard of Oz tonight, and I just might melt before I get there, given how hot it is and how badly the Metro is messed up right now...

Dill and herb quark, garlic cheese curds, scratch cheese (for gougeres!), chocolate pudding, chocolate milk, peach & yogurt smoothie, donut peaches, sweet cherries, shiro plums, apricots, blueberries, regular peaches (peach salsa, oh nom nom nom!), asian eggplants, bell peppers (for making salsa morada), shishito peppers (need to pick up some Korean fish-cake), and an actual locally-grown buddha's hand, presented for sale in a box labeled 'lemons'!

I made this pea & cream pasta recipe tonight, except I used a Persian lime instead of a lemon.

I greatly prefer the flavor of limes, and since I bought a bag of them, I thought I'd experiment.

2.5 quarts pie cherries, pint of apricots, pint of methley plums, pint of blueberries, pint of sweet cherries, 2 pints red raspberries, 2 pints black raspberries, a garlic braid (about 12 heads), garlic cheese curds, chicken empanada, tamale del elote, and boneless pork shoulder.

Also, another 'Lime Thyme' thyme plant, and an Italian oregano plant.

I'm going to can the pie cherries in syrup like I did last year, and the same with the raspberries. The garlic braid is destined to wind up as toum and roast garlic.

The pork shoulder is going to be Puerto Rican roast pork shoulder; this time I'll post the recipe.

Made jam tonight. It's a very simple recipe.

1.2 lbs hulled and chopped strawberries
1 cup honey (in this case, Killer Bee from The Bee Folks)
1 tablespoon lime juice (Nellie and Joe's Key Lime Juice is excellent!)
5-6 sprigs of thyme (lime-scented cultivar 'Lime Green' Thymus x citriodorus')

The yield tonight was 3 half-pint jars.

Tiropita, hummus, chocolate olive oil cake, melomakarona, pink lady applies, garlic, dried apple slices, persimmon vinegar, eggs, oyster mushroom, and kkakdugi (first time it's been available in months!).

I'm making beef-and-barley stew right now, which will be lunch for the week.

I made Vaquero Bean and Chorizo Stew tonight, using vaquero beans from Rancho Gordo, chorizo from the farmer's market, and chiprika instead of the cayenne and paprika.

It's quite tasty and filling, and will go with the cornbread I made from a box mix.

I definitely want buy vaquero beans again. Along with the sangre del toro beans, which are absolutely fabulous and I can't find anywhere.

Also, I'm going to try ayocote morado (a runner bean) and Good Mother Stallard beans the next time I order beans.
