Today, I made sujuk rolls with the ground lamb I bought on Saturday and a sheet of puff pastry dough that was probably a little more freezer-burned than was ideal.

Sujuk sausage rolls are basically pigs-in-blankets, but fancy.

Ingredients

  • 1 pound ground lamb

  • 2 garlic cloves minced

  • 1 t ground cumin

  • 1 t sweet paprika

  • 1 t dried mint

  • 1 t dried oregano

  • 1/2 t ground coriander

  • 1/2 t hot red chili flakes (Aleppo pepper is good for this)

  • 1/4 t ground cinnamon

  • 1/4 t ground nutmeg

  • salt and pepper to taste

  • 1 pound frozen puff pastry

  • 1 large egg yolk, beaten

  • 3 T hemp seeds (optional)



Directions

  1. Preheat the oven to 400F

  2. Combin the lamb, garlic, cumin, paprika, mint, oregano, coriander, chili flakes, cinnamon, nutmeg, salt and pepper.

  3. Roll the puff pastry int a square about 1/8 inch thick. Cut into long strips, roughly 3 inches wide.

  4. Arrange the sausage mixture down the center of each strip, then brush a long side of the pastry with water.

  5. Fold the pastry in half lengthwise so the edges meet and press closed.

  6. Line a baking sheet with parchment paper and transfer the rolls, seams side down, onto the sheet.

  7. Brush the tops with beaten egg, and sprinkle with hemp seeds

  8. Bake for 20-25 minuts, until golden brown.

  9. Cool slightly, then cut into 1-inch slices and serve.




I used a milk wash instead of an egg wash (not wasting most of an egg when they're not easily available at the moment), and skipped the hemp seeds. I had a good chunk of the ground lamb leftover, so that's back in the freezer until I decide what to do with it -- I might try making some sort of stuffed quick-bread or noodle dish with it.
