I bought some flank steak on Sunday so I could try the Rolled Flank Steak with Blue Cheese Stuffing recipe. I didn't use actual blue cheese, but the scratch cheese from Keswick Creamery.

It's turned out pretty tasty, but I really need to get a proper mallet to pound steak flat. And maybe I should use skewers next time, because kitchen twine is kind of messy...



Yum. And I had more than enough stuffing to freeze half and make it again soon. After I get something to whack steak flat with.

Have you a rolling pin? That will work in a pinch. Or, assuming they're clean, use the bottom of a skillet or a saucepan; I saw someone do that on a cooking show once.

Ah...

For next time, if you can't butterfly the meat to make it thinner, try marinading it for a short time with some meat tenderizer before you pound the living heck out of it.

Well, pineapple juice or mango juice will work, if you don't mind the fruity flavor it adds to the meat.
