To make mint chocolate chip ice cream, you need a double boiler to melt the chocolate.

I do not have a double boiler.

Thank god I'm descended from proto-monkeys, though, because it makes monkey-wrenching simple.



It worked a treat! The chocolate melted easily and quite fast.



I used mostly semi-sweet with a few squares of bittersweet -- both bars were Sirius chocolate that I buy at the Whole Foods. How does Iceland make so much nice food?

The chocolate melt needs to be poured in little by little for it to break properly into chips -- I'll know how to do that next time.

Also, you would not believe how strong the mint smell is. It's going to be YUMMY once it sets.

Microwaves work for melting chocolate, also.

And I pretty much always use one pot inside another (with water in the bottom) in lieu of a real double boiler.

If you have a stainless steel mixing bowl bigger than your pot, that makes an awesome double-boiler top (the curved sides will make sure condensation runs back down into the bottom), with the caveat that it will not have a handle.

But, yeah, I usually use the microwave. Go slowly, use low power, stir frequently.
