Homemade Ginger Ale

Ingridients
for syrup:
2 oz grated fresh ginger
1 cup firmly packed light brown sugar
1 cup water
for soda
4 cups seltzer water
1/4 cup lime juice
4 tsp lemon juice
4 lime wedges (optional)

Directions
To make ginger syrup:
- Grate ginger -- a food processor is really useful here.
- In small saucepan, combined grated ginger, brown sugar, and water and bring to a boil.
- Reduce heat and simmer for 5 minutes to completely dissolve sugar and infuse the syrup.
- Remove from heat and let ginger steep in the syrup until cool, about 30 minutes.
- Strain the syrup through a fine-meshed sieve placed over a container with a tight-fitting lid and then cover and refrigerat until well chilled. The syrup will keep in the refridgerator for up to 2 weeks.
To make soda:
- Fill four 16-oz glasses two-thirds full of ice.
- Pour 1/4 cup of syrup, 1 T of lime juice, 1 t of lemon juice, and 1 cup of seltzer water into glass and stir to combine.
- Garnish with lime wedge and serve.
OR
- Measure 4 cups of seltzer water, 1 cup of ginger syrup, 1/4 cup of lime juice, and 4 t of lemon juice in a serving pitcher and stir to combine.
- Pour into drinking cups with or without ice as you please.
