Salt Cod and Potato Brandade

fabrisse's, I figured I'd try making my own -- French Salt Cod and Potato Brandade
It's not actually that hard to make, though desalting the cod is a bit tedious, and it's pretty decent on the comfort food scale. I used up most of my homemade creme fraiche for it, and had a slight overflow problem with my au gratin dish being just a tiny bit too small. I'd cut back the water next time, I think. I might add a bit stronger spices, too, as it wound up very mild, unless it is better the next day.
