Pasta Con Sarde via

Ingredients
4 oz can of sardines packed in olive oil
1 small fennel
1 bunch spring onions or 2 shallots or 1 medium onion
2 tablespoons minced galic
1/c cup of golden raisins, dried currants, raisin or other dried fruit
1 small lemon
pinch of saffron
3 cups dried pasta -- penne or rotini preferred
Hard Italian-style cheese -- Parmesan or Tomme
Directions
This can easily be doubled, and is pretty tasty. I think I'll see about planting some fennel in the garden so that I have some on hand easily.

Hard Italian-style cheese -- Parmesan or Tomme
Directions
- Start the water boiling for the pasta. Open the can of sardines and drain the olive oil into a skillet and turn it to medium heat.
- Use a mandoline to shave the fennel into the skillet. Add chopped onions and minced garlic.
- When onion has softened, add raisins and zest lemon into skillet. Add juice of one or both halves of the lemon. If water has boiled, begin cooking pasta.
- Bloom saffron and add it to skillet. Lower temperature to medium-low and let simmer.
- Shred sardines and add to skillet.
- When pasta is finished, drain, and add to skillet. Toss sardines and vegetables with pasta.
- Grate cheese to taste, then serve.
